Vinitaly International Academy (VIA) Italian Wine Ambassador Mike Madaio kicks off an exciting new Vlog series from Italian Wine Unplugged: Mamma Mia …Che Buono!, which will pair Italian wines with local foods from all over the globe. As Verona is the home of Vinitaly, of course, we're kicking things off here.
TEASER EPISODE: PIZZA!
In this video, Mike pairs goodies from local pizza lab Saporè Downtown with Chiaretto di Bardolino, a rosé made at nearby Lake Garda.
These wines feature the Corvina grape, an indigenous variety most known for its contributions to Amarone della Valpolicella.
Here it shows off floral and citrus notes, and as well as a bracingly crisp, mineral-tinged finish; it's a perfect match for the variety of salty, savory flavors on display in any pizzeria.
CHAPTER 1: JOHN'S ROAST PORK, PHILADELPHIA, USA
In this video, Mike goes beyond the cheesesteak, to the place locals in-the-know go for the best sandwich in Philadelphia: John's Roast Pork. Made with slow roasted pork shoulder, garlicky greens and sharp provolone cheese, all piled on an incomparable local semolina bun, it's a sandwich lover's dream.
As this dish was created by Abruzzese immigrants, Mike looks to that region's signature grape for a pairing: Montepulciano. In this case, a young Montepulciano d'Abruzzo that showcases the grape's fresh cherry flavor and easygoing personality, with enough acidity and tannin to match the rich, salty flavors of the sandwich.
